Berrio Mill Preserves & Marmalades
It all starts with the Seville Oranges arriving in the first week of January. In the first couple of weeks the oranges are fresh and their pectin level is at its highest. This means we get a good set on our marmalade with a real sharp taste which goes so well on toast with a cup of tea in the morning.
The Strawberries start in June along with Blueberries, and Gooseberries. Again we work in very small batches to ensure a good set without losing the flavour. The temptation to make jams in large batches never pays and always results in a darker jam which lacks flavour. Later in the summer we make some Marrow & Ginger jam using our own marrows with Crystallised Ginger for that lovely warming flavour. You will find below a list of much of what we do. Please bear in mind, we are not a factory and can only make preserves using what is available from season to season, so some items may be in short supply.
