Berrio Mill Jellies
Every year we receive a huge amount of apples and other fruit through our cooperative. The great thing about apples in particular, is that they are usually high in pectin, so lend themselves to making jellies. Other fruit such as quince, blackcurrants, redcurrants, gooseberries, blackberries and elderberries also have a certain level of pectin. This means that there are a limitless number of combinations we can put together to make into delicious jellies to have with cheese, meat, fish, toast or best of all cream teas.
As you can read elsewhere, we also make a large range of chutneys, many of which have apples in their recipes. We take apple peelings and apple cores and boil them up to obtain more apple juice again to make jellies. When we have finally drained the apple pulp of all the juice, we give pulp to our two pet Kune Kune pigs. They have Cornish names Ebryl (April) and Tegen (Pretty little thing). Nothing at Berrio Mill goes to waste.
You will find below a list of much of what we do. Please bear in mind, we are not a factory and can only make jellies using what is available from season to season, so some items may be in short supply.
APPLE JELLY with CHILLIES GF
Superb with cheese (with a glass or two of red wine!) or a stir fry. Try it with ice cream, unbelievable!. WARNING Very Addictive!
APPLE MINT JELLY
Your lamb deserves the flavour of this mint jelly with attitude! Lambs all over Cornwall are trying to get it banned! Baaaa....
APPLE JELLY with ROSEMARY
A classic jelly. Ideal for meat, game or fish. Brush over a rack of lamb before roasting
APPLE JELLY with SAGE
Delicious with roast pork or chicken or add it to your gravy. Tasty with a cold meat salad or sandwich
APPLE& CINNAMON JELLY GF
Excellent with cold meats and cheese. Try it with a fruit dessert such as pear tart or apple crumble
MULLED CRAB APPLE JELLY GF
Mix this with our Cider Mustard and use to glaze baked ham or pork chops. WOW
CRAB APPLE JELLY GF
A traditional hedgerow jelly. Great on crumpets or toast
BRAMBLE & APPLE JELLY GF
A Cornish favourite. Excellent with brown toast or try a dollop with an apple pudding
APPLE & ELDERBERRY JELLY GF
A must for scones, crusty bread or croissants. Wonderful as a filling for a Victoria sandwich
APPLE & GINGER JELLY GF
What about a spoonful in a stir fry or as a glaze for pork chops or roast chicken? Great with Cornish ice cream and chopped roasted hazelnuts
QUINCE JELLY GF
This has a unique flavour and is wonderful on crumpets or with a croissants. Also good with cold meats or roast meats especially game
